Slit each baby eggplant in a cross without cutting all the way through.
Grind peanuts, coconut, sesame, goda masala, jaggery, tamarind and salt into a coarse stuffing.
Fill the eggplants generously and arrange them in a wide pan with the remaining masala.
Add a little water, cover and cook slowly until the eggplants are tender and the masala is thick.
