Marinate vegetables with yogurt, ginger, chilli, biryani masala, mint, coriander and half the fried onions.
Parboil soaked basmati rice with whole spices until the grains are firm in the centre.
Spread marinated vegetables in a heavy pot, top with rice, saffron milk and remaining fried onions.
Seal tightly and cook first on medium heat, then on very low heat until vegetables and rice are done.
Notes & Tips
A heavy pot or heat diffuser helps prevent the bottom layer from catching during dum. Nutrition values are approximate per serving.
