Whisk yogurt, half the besan, turmeric, salt and water until completely smooth.
Mix the remaining besan with sliced onion, spices and a little water; fry spoonfuls into pakoras.
Simmer the yogurt-besan mixture for 25 to 30 minutes, stirring more often at the beginning.
Add pakoras near the end and finish with a hot tempering of cumin, fenugreek, chilli and curry leaves.
Notes & Tips
Let the pakoras sit in the kadhi for 8 to 10 minutes before eating. Nutrition values are approximate per serving.
