Whisk besan, yogurt, lemon juice, salt and enough water into a smooth thick batter.
Prepare the steamer, then stir Eno into the batter quickly and pour it into a greased tray.
Steam for 15 to 18 minutes and cool briefly before cutting.
Boil a little water with sugar, lemon and mustard-chilli tempering; spoon over the dhokla and garnish.
Notes & Tips
Add Eno only when the steamer is hot and ready; the batter should go in immediately. Nutrition values are approximate per serving.
