Soak rice and urad dal separately for 4 to 6 hours, grind smooth and ferment the batter overnight.
Boil and roughly mash the potatoes; temper mustard, curry leaves and onion, then add turmeric and potatoes.
Spread a ladle of batter thinly on a hot tawa and drizzle a little oil around the edges.
Cook until crisp, place potato masala in the centre and fold. Serve immediately.
