Heat oil, crackle cumin and add chopped tomatoes with salt and turmeric.
Cook until tomatoes collapse into a chunky sauce.
Add chilli, coriander powder, jaggery and enough water for a light gravy; simmer for 5 minutes.
Add sev only in the serving bowl so it keeps some crunch, and finish with coriander.
Notes & Tips
For leftovers, store the tomato curry and sev separately. Nutrition values are approximate per serving.
