Ukadiche Modak makes a lovely finish to a festive meal, thanks to steamed rice-flour dumplings filled with coconut, jaggery and cardamom. It can be prepared at home with ordinary ingredients if you give each stage enough time.

Cook coconut and jaggery together until the filling is moist but no longer runny; add cardamom and cool.
Boil water with a little ghee and salt, stir in rice flour, cover and rest briefly.
Knead the warm dough until smooth, shape small cups with wet fingers and fill with coconut-jaggery mixture.
Pleat the edges, pinch closed and steam for 10 to 12 minutes until the shells turn slightly glossy.

Work with the rice dough while it is warm; cover unused portions with a damp cloth. Nutrition values are approximate per serving.
