Cook vegetables with browned onions, yogurt, biryani masala, mint and coriander until nearly tender.
Layer vegetables and rice in a heavy pot, adding saffron milk and fried onions between layers.
Seal, cook on low heat for 20 minutes, then rest 10 minutes before gently fluffing.
