Knead flour with water and salt into a soft dough and rest 20 minutes.
Mix crumbled paneer with chilli, coriander, cumin, garam masala, amchur and salt.
Stuff each dough portion generously and roll into a medium-thick paratha.
Cook on a hot tawa with ghee until golden brown on both sides.
