Rinse sabudana well and soak with just enough water for 6 to 8 hours until the pearls press soft.
Mix the soaked sabudana with coarsely ground roasted peanuts and salt.
Cook cumin, chilli and diced potato in ghee until the potato is tender.
Add sabudana and toss on medium heat until the pearls turn translucent; finish with lemon and coriander.
Correct soaking is the whole game—too much water makes sabudana sticky. Nutrition values are approximate per serving.
