Follow along step-by-step.
Dry-roast moong dal for a minute, then wash it with the rice.
Pressure-cook rice and dal with extra water until very soft and porridge-like.
Heat ghee, fry cashews, then add cumin, crushed pepper, ginger and curry leaves.
Pour the tempering over the pongal, mix well and serve immediately.
Pongal should be loose and soft; add hot water if it tightens while standing. Nutrition values are approximate per serving.
